What "speciality coffee" means when we say it

You've seen the words on a hundred shop fronts. Here's what they mean on ours.

Speciality coffee is coffee that's been treated carefully at every step — grown with attention, picked at the right time, roasted to bring out what's already in the bean rather than to hide it. The result is a cup with actual flavour: sometimes fruity, sometimes chocolatey, sometimes bright enough to wake you up before the caffeine does.

What it isn't is complicated. You don't need to know your altitude from your processing method to enjoy it. That's our job. Yours is to order the drink you like and get on with your day.

At VAXX we choose our coffees for one thing above all: consistency. The flat white you have on a rushed Tuesday should taste exactly like the one you have on a slow Sunday. That means we obsess over the details — grind, dose, temperature, milk — so you never have to think about them.

We'll happily talk beans with anyone who asks. And if you don't ask, you'll just get a very good coffee. Both are fine by us.
